Broccoli Sausage Pie Recipe with a Whole Wheat Pie Dough Recipe

This is a wonderful recipe that we have been making for years. We try to lower the fat by using low-fat cold meats and cheeses. It’s pretty good with a spicy sausage. We haven’t seen any recipes quite like it and we hope you’ll give it a try and let us know what you think. It’s good served with a nice green salad and a glass of red wine, we think.

Broccoli Sausage Pie

3 tablespoons unsalted butter

1 1/2 cups broccoli, cooked, diced

3 tablespoons of flour

1/2 pound hot sausage, crumbled, sautéed and drained

1 1/2 cup skim milk

milk, sesame seeds

3/4 cup grated Gruyère cheese or other cheese of your choice

1 whole wheat pie crust recipe

2 tablespoons fresh parsley

salt and pepper

In a saucepan, melt the butter. Add the flour. Cook the roux over low heat until thickened and slightly crowned, about 3 minutes. Off the heat, slowly add the milk, whiskey. Return to heat and stir until thickened, stirring or whisking constantly. Add cheese, parsley, and salt and pepper to taste. Heat until cheese melts. Off the heat, add the broccoli and sausage and mix well. let’s cool down

Divide the dough into 2 pieces. Roll 1/2 into 8 or 9″, depending on the size of your pie pan. Place on plate. Fill with broccoli mixture. Top with remaining rolled crust. Cut several slits in top. Brush with milk, sprinkle with sesame seeds Bake in preheated oven 350 for 25-35 minutes or until slightly
browning Transfer to wire rack and cool for at least 10-15 minutes before serving.

Whole Wheat Pie Crusts

1 cup all-purpose flour

1/2 cup whole wheat flour

1 stick of unsalted butter

1/2 teaspoon salt

1 egg lightly beaten with 3 tablespoons of milk

Put the flour and salt in the food processor. Pulse in the butter until it resembles coarse flour. Add the egg mixture and mix until it begins to come together. Form 2 balls, one slightly larger than the other (bottom vs. top). Cover with wax paper and refrigerate at least 1 hour before using.
Make the crust for a pie that needs a top and bottom crust.
